Can beginners come to this class?

Absolutely.  We designed this class with novices in mind.  Each lesson starts with us demonstrating what you need to do.  Then you will go to your lab table and your team will do the same thing under the guidance of one of our lab instructors.  It's easy and fun!

Everything we teach is covered in our step-by-step student manual so you will have a reference to take home with you.

If you don't own a smoker,  this is a great way to learn which models would be best suit your needs.

What will I learn to cook?

We always cook the big four: brisket, ribs, pulled pork and chicken.  We also always make sides and desserts but which recipes may change from class to class.  We also add 3-6 special items.  Past items have included chicken wings, drumsticks, pork loin, turkey legs, and thanksgiving turkey.  We are open to requests so give us a shout before your class.

Who teaches the class?

Class is taught by Grand Champions with years of experience and the trophies to prove it.  We also have assistants and a pit master watching over the smokers at all times.

What do I get for my tuition?

Ten hours of hands on instruction where you will work shoulder-to-shoulder with us Pro's and learn to prepare a wide variety of BBQ dishes. Come hungry because we serve breakfast,  lunch and a Dinner Banquet featuring the delicious BBQ you cooked.  Don't forget to invite a guest of your choice to attend the Banquet.  You also get a step-by-step BBQ manual with all our recipes,  and an apron you can take home and wear with pride.  After you graduate you can get on-going e-mail support from your instructors.

How much is class?

Check the enrollment page for prices and class dates. Seating is limited to 25 per class.

How can I sign up?

How can I buy this for someone as a surprise?  Do you have gift certificates?

Absolutely.  Go to the Classes page to select a class, then click the “Purchase Gift Certificat” button to enroll your student and pay through our website. We will email you a printable gift certificate.

What is your cancellation policy?

100% refund for a cancellation or re-schedule request prior to two weeks before the class. Cancellation or re-schedule requests of less time usually results in an empty seat for us and so we cannot offer a refund or re-schedule with less than two weeks’ notice. Same goes, of course, for a no-show. You may sell your seat to someone else but you must notify us so we can register them. We will not allow anyone to attend our class who is not on our roster.

What type of smoker should I buy?

That is really a matter of what you need and how much you want to spend.  Our instructors are happy to advise you on the best value for what your needs.

What type of smokers do we cook on in class?

We have every type of smoker ranging from $99 home made barrel drum smoker to $5,700 trailer smoker. We also have a “set-it-and-forget-it” pellet smoker that produces great tasting BBQ without the need to tend a fire.

When is the class?

Class dates are listed on our enrollment page and are updated throughout the year. Generally we start in March and end in November.  Classes fill out fast so it's a good idea to enroll early.

What time does the the class start?

Class starts at 7:30 a.m. sharp because we have to get the big meats prepared and into our smokers by 9:30 a.m. Supper is at 6:00 p.m. so you can see we have a lot of cooking to do in a short time. It’s a good idea to arrive by 7:15 a.m. so you can enjoy our hot breakfast and chat with your instructors.

Can I bring my own smoker to class?

Yes.  But it may be more of a hassle than it is worth.  We have a variety of smokers that are the same or similar to the ones you have at home.

Can I bring my own meat to class? 

If you want to sure, just let us know in advance!  We'll throw it on a smoker!
